Named after two brothers and third generation bakers, Michael and Dermot Walsh, this highly regarded bakery is one of the four bakeries recognised by Euro-Toques for continuing to include the traditional Waterford blaa (EU PGI status) in their range.
They supply many catering and retail businesses in the area and - although they produce a full range of baked goods - spreading the word about the little blaa is something of a mission: "We are rightfully proud of our own unique version, and whilst the Blaa may be a Waterford speciality at the moment, we intend to make our famous bread roll a star on a national scale. The whole of Ireland will be having a Blaa with bacon in the middle before long!"
Judging by the number of menus we see around Ireland that now proudly list the Waterford blaa among their speciality foods and suppliers, their wish is becoming a reality.
