Slow Food Ireland members Caroline and Joe Rigney rear free range rare breed pigs such as Tamworth and Saddlebacks on their west Limerick farm, and also have a Farm Shop, where their pork products, Curraghchase Meats, are the star of the show.
Hand made the old fashioned way, their products - notably dry cured bacon and ham, and homemade sausages, puddings and burgers - are truly outstanding, and have rightly won numerous awards. Caroline's renowned white pudding is famously made to a special recipe, and the pork burgers are especially popular.
It's definitely worth factoring in a visit to the farm to buy them if you're in the area over a weekend, and you'll also find other tempting artisan products in the shop.
Look out for the Curraghchase name in good shops, and on menus too; some of the best chefs in the region (and, increasingly, further afield too) are proud to showcase these excellent products. You won't find a better rasher anywhere.
