Ireland’s original sheep’s milk cheese, Cratloe Hills cheese has been made by Sean and Deirdre Fitzgerald since 1988 and is an early example of the diversification that has since become the norm for Irish family farm.
Produced seasonally at a purpose-built cheese plant on their farm and using the pasteurised milk of their own flock, this fine cheese is semi-firm and mild when young (from four weeks), and develops a hard, grainier texture and deep sweetish flavour in the mature cheese (over a year).
Look for it in speciality shops, and on menus in the area and around the country.
