In production in a small way since 1993 (and force to be reckoned with since 2004, when Bertram and Celine Salter married) the highly regarded poultry company Carlow Free Range Ltd. (www.carlowfreerange.ie), is now a byword for quality throughout Ireland.
Although best known for their chickens, they also supply turkey at Christmas and, true to their philosophy that ‘Free Range tastes better’, only free range chickens and free range turkeys are reared on the Salters’ farm.
To match their sound production methods, Bertram and Celine would like to see consumers going back to older, traditional cooking methods, using everything - not just the meat, but also the bones to make stock.
Unusually, the Salters have complete control of the whole process from hatching on the farm right right through to delivery; an area of the farm has been developed to function as a slaughterhouse, and this EU Licensed facility now caters for both chickens and turkeys.
Not surprisingly perhaps, some of the butchers who took delivery of Bertram Salter’s first batches of free range chickens in 1993, such as Michael McAssey in Ballon and John Crimin in Blessington, are still proudly selling the product today.
