Rhubarb and Granola Smoothies

Rhubarb and Granola SmoothiesThis recipe for a filling and healthy smoothie is from Stephen Jeffers at the popular Bangor restaurant Jeffers by the Marina. Ingredients

400g red rhubarb
1 orange, juice and zest
75g caster sugar
1tsp lemon juice
1tbsp granola or rolled oats
2tbsp thick yoghurt
100ml milk

Method

1. Wash and trim rhubarb; cut into small pieces
2. Zest and squeeze orange
3. Place all above in small saucepan and add sugar; cook until soft
4. Leave to cool
5. Now put all ingredients in blender except milk; blend until smooth
6. Add the milk slowly, then pour into glasses and drink immediately.
