Ireland can boast a good few high quality smoked salmon producers and here, on the south side of Galway Bay, Declan Droney's family business in the picturesque seaside village of Kinvara is among the most highly praised.

Personal endorsements abound and they have won many awards, including one from the Irish Food Writers' Guild.

Using traditional smoking methods and the best organic Irish salmon (produced 6km off the coast of Co Mayo - see Clare Island Organic Salmon) - the Kinvara products are known for their firm flesh and subtle smoking: delicious!

Available in good stores, eg Supervalu, and from their online shop.
