Just a few doors along from the Salty Dog on Bangor's seafront, Rachel Armstrong's super café hit the ground running when it opened in 2015.
With its fun decor - a lively blend of maritime themes and vintage that's very easy on the eye without being at all contrived - and constant buzz, The Guillemot is just a great place to be, and the friendly, well trained staff couldn't be more accommodating.
Quality was the name of the game from the outset, and it has stood Rachel and her team in good stead. Delicious food, simply cooked is what you will find here and who could ask for more.
Regulars troop in for their favourite dishes - some can't pass the door without popping in for the Guillemot Omelette (pale smoked haddock and Parmesan cheese), and who could blame them, but Croque M'sieu/Madam (mature cheddar cheese and ham toastie smothered in béchamel sauce, plus an egg on top for 'Madam') is equally hard to resist.
The Vegetarian Breakfast of herb-roasted mushrooms & tomato with egg (as you like it) and guacamole on soda bread also comes highly recommended Others come especially for their unusual soups with wheaten bread, or the gourmet sandwiches - they have a great range of breads, including sourdough which makes fantastic toast.
Terrific coffee is a point of honour, also pots of loose leaf teas and infusions - perhaps with a delicious baked treat to help it down...
The Guillemot is one of Bangor's most popular cafes, and its success is well deserved.
