Stefan Griesbach is a familiar sight at Galway Farmers’ Market and a fish supplier of choice to many of the best restaurants in the area.
Intent on selling “the best quality, best value in locally sourced, wild Irish fish”, he is also a great source of information about fish and the fish industry.
Commenting that “Cod has become the benchmark of the fish world”, Stefan points out that that this controversial fish is not endangered everywhere. “Some areas in Europe have very healthy cod stocks while others are under serious pressure. Cod populations around Ireland are very low in the north Donegal area and in the Irish sea. However the stocks of cod in the Celtic sea, south of Ireland, are so healthy that the quotas have recetnly been increased by nearly 75%.”
And, although it is not always be easy to know exactly where fish is coming from, looking out for the Responsible Irish Fishing logo is a good start.
An interesting man - among the few to treat fish as a seasonal food and to educate customers about it - and great fresh fish.
