Farrellys small but exciting traditional butchers shop in the centre of Delgany is a destination of choice for many discerning shoppers - and no wonder. You may just pop in to get a few of their brilliant free range pork sausages or some plump Wicklow lamb chops, but the list is sure to grow as you cast your eye over their irresistible display of fresh meats and poultry - it would be hard to leave without one of those big fat Carlow Free Range chickens for a start....
Established by Anthony Farrelly in 1958 and now run by his sons Anthony and Padraig (who clearly relish the job), Farrellys is one of the few butchers who have their own farm and licensed abbattoir. They take pride in the farm to fork guarantee of slaughtering their own beef and lamb - and other animals carefully selected for breed and quality, some of them organically produced - and in the traditional butchering skills that have been handed down and allow them to offer a service that has become a rarity, ie selling meats from all parts of the animals they butcher.
Their meats are properly hung in the traditional way, for maximum flavour and tenderness, making them perfect for the simple cooking methods that allow the quality to speak for itself. But they are also innovative and well up to speed with the demands of shoppers so, alongside the thick juicy steaks, gleaming kidneys and racks of lamb, you will find homemade burgers, prepared meals ready for the oven and all kinds of tasty concoctions like stuffed chicken legs, Peking pork chops, chicken in a whole range of piquant sauces and everything you could want for the barbecue - and there's a range of fresh vegetables and accompaniments, too, making it a one stop shop.
