Easily spotted by its grey-slated mansard-style wraparound roof feature, this landmark building is prominnetly situated on a fork in the road on Waterville's seafront. Known for many years as The Huntsman, it is now owned by experienced hospitality couple, David and Katie Farrell, who have given it a new lease of life as Dooley's Waterfront Bar & Restaurant.
Overlooking the ocean on the Ring of Kerry, it's elegantly set up and makes the most of its wonderful location with huge windows, a covered terrace and outdoor tables for those sunny days. If that view doesn’t put you in the mood for a large plate of oysters, perhaps nothing ever will.
The specialities are seafood and steaks, also the famed Kerry lamb - all sourced locally and top quality. The oysters are from across the bay, the fish is whatever came in fresh from the boats that day and the beer is from McGill’s the local Waterville brewery. Portions are generous and not only do main dishes come with unusually plentiful side vegetables, but there's a good choice of plant-based dishes too. (A supplier list would make interesting reading.)
Katie is the chef and the food offering is simple but well thought out, with understanding and respect for the quality and natural delicacy of local ingredients. Served with a simple mignonette, the oysters - from Caherciveen, just up the road from Waterville, and delivered fresh daily - taste of the ocean without being overly salty. A beautiful Irish product. The gorgeously crafted black pudding is made with fresh blood by the local butcher, Skellig Meats - creamy and peppery, it pairs beautifully with scallops.
The daytime menu includes plenty of lighter dishes like salads and sandwiches, but also a sprinkling of the prime steaks and seafood treats (including lobster) that feature on evening menus, so it's equally perfect for a quick bite while you're out and about, or for a leisurely holiday lunch.
Front of house, the staff are warm, efficient and pleasantly chatty. You would be comfortable dining here on your own, or relaxing in one of the two bars, and the locals will chat to you casually as they walk past. The smart diner will book a window table or perhaps eat outdoors, weather permitting, and enjoy Katie's delicious fare while admiring the sun setting over the sea.
