A licensed member of the Irish Organic Farmers and Growers Association, Margaret McDonnell rears her quality birds on the Curragh and they are the chicken of choice for many discerning chefs, including Georgina O'Sullivan of the Ballymore Inn and Coolanowle Country House - who also sell them through their online shop (www.organicmeat.ie).

Ballysax Farm produce is available from Kilternan Country Market, and some selected butcher shops in Dublin, Wicklow and Galway. They also supply private orders and farmgate sales are available too.
