Another venture from the team at nearby cocktail hotspot Cask, under co-owner Andy Ferreira, Paladar hit the ground running when it opened on Cork’s Bridge Street in autumn 2022 - and very soon started to make waves internationally too, with inclusion in the Top 10 list for the Best New International Cocktail Bar in Europe title at ‘Tales of The Cocktail’ 2023 Spirited Awards.
Transformed into a place where you'll find all the fun, energy and vibrance of Latin America, the long narrow space is now an atmospheric stash of Latin American art, music and photography, topped off with a dramatic glass installation from Eoin Turner design.
As Cask is so well known as a leader in cocktails, it's no surprise that Paladar has a unique cocktail offering too. Curated by bar manager Oisín Wolfe (a finalist in tthe 2023 Diageo Reserve World Class Bartender of The Year), you'll find a rotating menu of classic and signature cocktails based mainly on rum, cachaca, agave and pisco rather than whiskey and vodka (though those appear too).
So, when you visit, prepare yourself for a feast of Latin American inspired food, drink and music, all coordinated for maximum enjoyment and served by great staff who clearly enjoy what they do.
You’ll find some of the old favourites here, such as Margarita and Caipirinha, but you can also dip into a South America you may not have tasted before. Try the rum based Plantation Café Swizzle, for example, or perhaps the Tequila-led Spitfire... There are South American beers too, and a non-alcoholic option (from New York). Also an excellent short wine list, all from Chile and Argentina, with highlights including reds from renowned Chilean winemakers Pedro Parra and Aurelio Montes.
