Ever since its opening in this apparently unpromising north city basement location three decades ago, Chapter One has been a force to be reckoned with - and was our Restaurant of the Year (under the Egon Ronay banner) for the first time shortly afterwards. Many would cite it as their favourite Dublin restaurant and this year the biggest news in Irish hospitality – and a big surprise to most – has been the changing of the guard here, with a partnership between chef-owner Ross Lewis and Mickael Viljanen, formerly of the GreenHouse, announced. A marriage of excellence, creativity and flair, Chapter One by Mickael Viljanen is the most extraordinary restaurant in Ireland at the moment. Aligning two of the biggest names in fine dining, the exciting collaboration saw Viljanen take over as chef-patron, bringing a new level of cooking to the Parnell Square favourite. Despite the peerless, friendly service the exquisite food is the star here with every dish magnificent in its creativity and flavour. Dining here is extraordinary in every way.
