In a town where new restaurants are stealing the limelight every month it’s reassuring to know that some of the long-established gems - like this one, almost hidden from view and beloved by savvy diners for 14 years - are as delightful, and as relevant, as the day they first opened.

Despite its popularity since it first opened in an intimate Georgian basement in Pembroke Street in 2004, Dax manages to feel delightfully exclusive, like a well-kept secret amongst foodie friends.

In 2017 the dream team of chef Graham Neville and restaurateur Olivier Meisonnave reunited 12 years after first working together in the late great Thornton’s (much-missed since its closure last autumn), giving Dax a whole new energy.

Outstanding modern Irish cooking, using the finest seasonal Irish produce, is matched by charming service and a top wine selection, ensuring Dax’s future as one of the finest and most exciting restaurants in Ireland - and a very well deserved choice for our Restaurant of the Year 2018.
