This beautiful hotel dates is situated on its own 310 acre wooded island (complete with 18-hole golf course), reached by a private ferry. An ancient beech avenue leads guests to the l6th century castle with its vaulted great hall and welcoming log fire.
The hotel combines the elegance of earlier times with modern comfort, service and convenience - and the location is uniquely serene; its quietness (and the golf facility for off-duty relaxation) makes the castle a good venue for small conferences and business meetings, but it is also a highly romantic location and perfect for small weddings.
Rooms combine the elegance of times past with modern convenience and have views of the immaculately kept gardens and golf course.
The comfortable Fitzgerald’s Bar commemorates the castle’s heritage and houses an extensive whiskey collection alongside modern cocktail specialties and well curated wine list.
Fine dining is offered in the Munster Room restaurant and less formal food can be taken in the Kings Channel Cubhouse just a stroll away in the extensive grounds, where activities include tennis, croquet, clay pigeon shooting and falconry displays. Afternoon Tea is served in The Fitzgerald Room, The Leinster Room and The Conservatory and is very popular so booking is advised.
Weddings take on special elegance here, with an in-house wedding co-ordinator who tailors bespoke packages for every bridal couple.
Munster Room Restaurant
Atmospheric fine dining is offered in the richly panelled Munster Room, where Waterford chandeliers sparkle and Head Chef Michael Thomas's menus feature local seafood and fresh produce from the surrounding river valley and mountains.
An extensive wine list includes some well chosen mid-range bottles and wines by the glass as well as many special occasion choices. As elsewhere in the hotel, discreet, well-trained staff (including the sommelier) look after guests magnificently.
